Easy Easter Chocolate Cupcakes Ingredients For the Chocolate Sponge (makes 12 cupcakes): 1 cup granulated sugar1 cup flour⅓ cup cocoa powder½ tsp baking powder1 tsp baking soda½ tsp salt⅓ cup canola oil½ milk1 egg1 tsp vanilla extract½ cup hot water(You will also need 12 cupcake liners) For the Easter Themed Frosting: 1½ cups unsalted butter5 cups sugar1 tsp vanilla1 tbs heavy creamMars Spring Minis Mix and/or STARBURST® Original Jellybeans Easy Easter Chocolate Cupcakes Method For the Chocolate Sponge (makes 12 cupcakes): Preheat oven to 350F. Line muffin tin with 12 cupcake liners.In a large bowl, mix the sugar, flour, cocoa powder, baking powder, baking soda, and salt.Mix in the canola oil, milk, egg and vanilla extract until combined.Add the hot water and stir the mixture into a smooth, thin batter.Fill the muffin cases to a half inch below the top.Bake for around 20 minutes until a toothpick comes out clean.Allow your cupcakes to cool completely before frosting. For the Easter Themed Frosting & Decoration: Cut the butter into pieces and whip the butter with an electric mixer (low-medium speed) for 3-5 minutes, until the butter looks light in color.Add the powdered sugar gradually, one cup at a time and mix on low speed until combined with butter. In between each cup of sugar, add a little of the vanilla extract and cream until all combined.On a medium-high speed beat the frosting for another 3-5 minutes.
